Goodbye October

October has flown by too fast for me.
Usually I am super excited and ready for Thanksgiving and Christmas
but this year I am hoping for it to slow down so I can
enjoy these last few months of 2010...

Last Sunday we spent the afternoon at
Parkhurst Pumpkin Patch
with some friends.
It was fun!

Then we came home and carved pumpkins!
Of course I had to clean the pumpkin out
because apparently pumpkin guts are gross.

And Matt celebrated his senior night last Tuesday night.
(i'm a little happy that soccer season is almost over,
unfortunatly,
we will be living at hat trick playing indoor on Sunday afternoons.:) woo-hoo.)

...I found out that Matt will be leaving January 10th
for Costa Rica until May.

So...
Dear Time,
SLOW DOWN.
Thanks,
Randi

t-shirt quilt #2

My mom asked me to make the only senior a tshirt quilt
as her senior present, so here it is:

I used fleece for the back.
man, it was comfy!

pumpkin pie puddin'

one day I was on yahoo.com and I saw a headline
for desserts you can cook in a crockpot.
I had no idea you could cook desserts in a crockpot, so I checked it out.
There were a few that sounded yummy,
then I came across pumpkin pie pudding.

Matt loooves pumpkin pie.

I finally decided to make it Friday when i had the day off
because it takes close to 6 hours to cook.
oh man did it make the kitchen smell wonderful
and it tasted delish!

So I thought i would share the recipe with you,

Ingredients

  • 1 (15 ounce) can solid pack pumpkin
  • 1 (12 fluid ounce) can evaporated milk
  • 3/4 cup white sugar
  • 1/2 cup biscuit/baking mix
  • 2 eggs, beaten
  • 2 tablespoons butter or margarine, melted
  • 2 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract
  • Whipped Topping (optional)

Directions

  1. In a large bowl, combine the first eight ingredients. Transfer to a slow cooker coated with nonstick cooking spray.
  2. Cover and cook on low for 6-7 hours or until a thermometer reads 160 degrees. Serve in bowls with whipped topping if desired.

i found this recipe on allrecipes.com

meet the newest family member.

Meet Mia.
our new lovey baby.
technically she is my sister's new puppy,
but i claim her as mine. : )
she is cute, cuddly, playful, sweet, and ornery.
she has the prettiest eyes you can imagine.
Mia Girl loves being outside, barking at her cat brothers, chewing,
supporting the mens & womens SNU soccer teams,
sleeping, cuddling, eating, and chase.

i took her to the SNU soccer games yesterday
and she hates sitting in the passenger seat,
she is always trying to sit on my lap
and i looked over when i was at a stop light and she
was just looking at me with the most pitiful face.
gah, i love her.

Pumpkin Schmunpkin

This would be my only pumpkin that survived.

I was so excited because Matt's parents planted
tons of pumpkin seeds out at the farm earlier this year and
all I could think about was having my own little pumpkin patch
and selling them out of the back of my truck.
But no, I have one little bitty pumpkin that is sitting out on my
front porch.

Happy Fall! : )
